It has been about 16 months now since my blog first came into fruition, things have changed so much in my life since then. There have been times that I couldn’t see any point in carrying on with it. On the flip side, it has kept me afloat when things were dire, that and the Facebook page that runs alongside my blog.
Health-wise things have spiralled downwards so fast in the past 2 years. My spina bifida has now progressed to a stage that I never believed would happen, and which is I am now mostly wheelchair-bound because of my weak legs and severe spinal pain. I also suffer from osteoarthritis, fibromyalgia, anxiety and depression.
I have done a lot of soul searching in the past few weeks and I must admit I had to dig pretty deep to find my usual stoic determination.
This is not a blog about doom and gloom though, it is though however to consider how lucky I am. I have the best support network and big shoulders to cry on, that network also has a huge belief in me when I doubt myself daily. My boys, best friends and my followers. With their support, I want to build on my blog and grow it as much as I can.
On the plus side, I have managed to lose nearly 2 stone with Slimming World, so lots of the newer recipes will be healthier and where I can I will start to include more nutritional value.
It is all about packing in flavour, not calories, such as roasted garlic and vegetables, herbs, and seasonings. I am much more experimental and less scared of adding new flavours now. Go bold or go home as they say.
